Good morning and Monday (boooo) to all. Was perusing the instructions for some BB extract kits that I would be interested in, and sure enough every one except lagers says to ferment at 64-72 degrees. Surely not all these beers have the same fermentation temperature right? Some beers I have my eye on:

Now each one list fermentation temperature as the same range, but what would you veterans say is ideal for each one?
Also the instructions say in all caps to DO NOT REHYDRATE YEAST! Is there a negative to doing this? I thought rehydrating is beneficial? Are they just saying add it dry so people don't mess it up?
