SWMBO thawed some pork chops, and I really didn't want regular old pork chops this weekend, so I threw this together (far from authentic, but it turned out well):

1 lb pork, cut into 1" pieces (stew meat, shoulder, chops...whatever's on hand)
1/2 cup mild salsa
1/2 cup green chile salsa
1 fresh tomato, seeded
1/2 fresh onion, peeled
2 roasted jalapeños, seeded
Dried red chiles to taste (1 or 2 for medium heat, more as desired)
1/2 cinnamon stick (optional)
Salt to taste

Puree all ingredients except pork in a blender or food processor. Put everything in a slow cooker set to low heat. If necessary, add water to cover pork. Cover and cook for at least 6 hours.

Serve with Mexican rice, refried beans, and a light lager of your choice.

It turned out great! That's why I decided to post it and why I took the picture after a few bites. The roasted jalapeño adds a little bit of character, but I can't disagree with your suggestion to try some chipotle.
