Repitching on yeast cake

Can I just dump new wort in? How long will this keep till I use it?

You can pitch right in on the yeast cake. I have done so many times. A lot of the folks on this forum advocate not pitching onto the whole cake, but instead using about 1/4 of it. If you drained all the beer off of it you will have to pitch on it right away or wash it and store it in the fridge (usually in Mason jars).
I usually time it so that when I rack off the beer (leaving a little to cover the yeast), that I am pitching on it that same day.
 
Yes. Pitch on the whole cake Atleast once. It will help you address any problems with your blow off tube set up.
