I've never brewed nor bottle conditioned a Hefe until now. (Actually its a Dunkelwiezen but I used the same yeast so the same rules should apply.) Here 's what I know about Hefe yeast. 1. it refuses to floc 2. It starts quick and ferments like a bat out of hell. Since those two things are true it seems like the additional yeast in the bottle, plus the nature of that yeast, would make for faster bottle conditioning.

Thoughts?

Just brewed my first attempt at a Hefe last month. From start to finish it was drinkable in 3 weeks! 2 weeks in primary and 1 week in bottles, it's my new favorite recipe!

I just popped one that had been carbing for 12 days and it seemed fully carbed. It is a quick turn around but awesome beer. Try a Dunkelweizen next time. Wonderful beer and the turnaround is just as quick.
