For my first all grain brew, I brewed my first stout. Beersmith predicted 1.049. My wort ended up at 1.040 (potential 3.25% ABV). I was at the asian grocery store getting some ingredients for Pho (Vietnamese beef noodle soup) and saw some palm sugar that I figured I could use to boost the ABV on my stout. I was considering adding 1/2 to 1 lb. of the palm sugar. Is there any reason why I shouldn't? I wanted the stout to be a lighter beer, but 3.25% is a bit too low.

A half pound will dry the beer out slightly as well. Not a problem in the average stout.

(Man, I miss Pho shops. You'd think a cold, rainy place like the PNW would have a niche for large bowls of hot, savory soup. I make my own, but it's not the same. I call it Faux Pho.))
