I brewed a "palesner" (pilsner with a kolsch yeast), it's in the keg in the fridge, lagering. It's delicious, but it's very cloudy (used a pound of german wheat malt) - i like the idea of a cloudy, unfiltered lager, but if i decided to try to clear it up, would the gelatin make some of the flavor drop out?

Some, but not much. I doubt you'll even notice. I had a hard time getting kolsch yeast to drop. It took mine about 10 days at 32F + gelatin.
