Hi folks,

I was going to brew up a steam beer. I have 10lbs of two row and 1lb of crystal 40. I've changed my mind on pitching the wyeast 2112 as it is now too warm here in fl. Ambient temp of house is 73. Any suggestions on an audible with these ingredients? Ill be by the LHBS to pickup some new yeast and hops. Amber ale? Thanks!
 
73 degrees ambient, is too high for almost any ale as it's the upper limit for most ale strains anyway. Once fermentation starts, it gets even warmer inside the fermenter than the ambient temperature because fermentation itself produces heat.

Can you put the fermenter in a tub of water, and add a frozen water bottle now and then, to try to keep the temperature in the high 60s at the most? It's a challenge in Fl to keep temperatures in the 60s I'm sure.
