I have a question I have seen several threads on this board where people have added honey or brown sugar to their beers. I havent yet brewed a recipe with either of these ingredients. Im just wondering what types of flavor profiles they can add to a beer?

Sugars generally contribute much less flavor than you would expect. They mostly just increase the alcohol content and dry out the beer.

In very large quantities, they both taste pretty much like you would expect. Honey gives, well, a honey taste :) with floral/blossom aroma (which really depends on what kind of honey you use) while brown sugar tastes like molasses.

You have to use a ton of these for the taste to be noticeable, though.

You can get a similar result to brown sugar without the drying and alcohol boosting effect by adding a small (2 oz) quantity of molasses: can be nice for darker beers.
