So I sampled my first IPA today and it has distinct Belgian-style flavors. Kinda weird. I have an idea of why though... tell me what you think.
I started off using a white labs English Ale yeast, but It was taking it's time to show any air lock action, so i re-pitched with a Safale (Dry) California yeast next. The HBS guys recommended it. The next day it was bubbling away.
Could the combo of yeasts be the reason for the different flavors? Or could it be that the beer is still "green". It has been just 2 weeks in the bottles. Or possibly another reason?
