I've got a couple of dozen extract brew days under my belt now with very good results. I brewed an English Pale Ale this morning. Basically a routine brew day. I chuckle when I think how stressful my first was . . . . planning everything out, trying to sinc everything, worrying about sanitation, basically running around like crazy person and worrying about everything I did.
Now it is just a casual (and enjoyable) affair. I am usually very happy with airlock activity withn the first 24 hours and ecstatic on those days when 4 hours does the trick. But today . . . . I must have really created an ideal environment for the Nottingham beasties. One hour and fifteen minutees after pitching, this thing is off to the races. Life is good!
