New to this forum and a fast learning brewer. I'm preparing for my 11 batch since my inception in March of this year. Looking into my second Wit batch, this is my first repeat of any style. Some friends of mine are to be married in September and have requested that this be there gift, fine by me! I don't write much but if I figure out a killer recipe, I'll post it for review.

Current Stock:

Raspberry Wheat (for the little lady)
Belgium Trappist Wit
Irish Red Ale
Coriander Amber Ale (My FAV so far)
Double IPA
Ginger Pale Ale
DunkALE (Still Carbonating)
Spiced Hefeweizen (Still Fermenting)
 
Your Austin Wit recipe is what led me to this site via a Google search for some Belgian guide lines. This last Wit I brew was supposed to be a Blue Moon Clone. It turn out very good and surprisingly strong since I substituted WLP500 Trappist yeast. It did not however taste like Blue Moon. This time I will use WLP400 and a recipe with more wheat and a little less Honey.
 
Ah, very cool. I've made the wit a few times and it's always turned out great. Not a dead ringer for Blue Moon, but it's still really good.
