I have a couple of free days this weekend so I want to brew a couple batches of beer. My only method of temp control will be a swamp cooler. I have to leave town for 4 days starting on the 15th. If I brew now and keep the temp down during the hardest part of the fermentation, and when I leave town just turn the AC up on high in the room , do you think I will be OK temp wise? OR I COULD transfer to secondary the day before I leave and stick the carboys in the cooler to cold crash.. any suggestions?
