Just cracked open one of my German Christmas Amber Ales after 2 weeks of bottle conditioning. I'd say it's about 2/3 carbed, and it tastes amazing. Nice taste of nutmeg, alspice, and mace... I can't wait till it ages out for about 22 more days (12-24-2011).. I just had to share..... :mug:
 
nice I did the same with my blueberry chocolate stout today, 2 weeks in bottle! Going to be doing the same on the 24th
 
That sounds great! I'm hoping to get my next batch via UPS tomorrow. A spin-off on Young's double chocolate stout with a pinch of candied orange peel. I just hope the package arrives in spite of bad weather so I can get the yeast starter going in time for a Monday night boil...
