I decided to try a cyser or apple melomel, whatever this is, but I have no idea what OG I'd be looking at. Beersmith is saying OG of 1.060 and ABV of 19% so I'm not sure if I'm planning for too many fermentables or if my data in beersmith is wrong. Anyway, never made one but I wanted to have some fun with it so here is what I was thinking:
4 Gal Apple Cider
7 lbs Honey
1 Cup of Molasses
1 Tbl Pectic Enzyme
1 Tbl Acid Blend
1 tsp Tannin
1/8 tsp Grains of Paradise
1/3 Cinnamon Stick
.75 oz Sweet Orange Peel
2 Whole Cloves
Lalvin EC1118
Heat about 1/2 gal of cider and dissolve spices and honey and throw into the bucket and pitch the yeast. Some books I've been reading have mentioned throwing dry yeast with orange juice for an hour before pitching. Could I use apple juice or does it really matter?
I'd like for it to end up semi-dry, but if it goes all dry, I'll stabilize and back sweeten with some honey.
