Certain beers, such as Guinness draught have a creamy appearance when first poured. As they sit for a minute the creaminess "settles" from bottom to top and forms the head. What causes this and is it possible to accomplish in homebrewing?
I'm pretty sure Guinness stout doesn't do this. I think the beers that do, have a "widget" in the can.
