So I started brewing a Hefeweizen beer last Sunday, its been fermenting for about 10 days. Its still bubbling every 17 seconds.
But when I look at my Carboy I can see a thick layer of yeast at the bottom, all the beer, then a thick layer of what looks like sludge on the top.
Is that normal? or did I screw my beer up?
If its normal, when I go to bottle it do I have to mix it all together or just siphon as is? lol I just dont want to screw up my first batch.
Any Suggestions??
