Dubbel In Secondary

Ok, so I am on my second batch. If you guys read my 1st post, I had an issue with my 1st batch...ended up pitching baking yeast, but thankfully, it turned out fine.

Now onto my latest issue...

Cooked my dubbel, pitched yeast, threw it in primary. Initial gravity reading was 1.062. Fermentation kicked in at about 6 hours, 12 hours into fermenting, it blew my airlock off! Sanitized, re-attached. A few hours later, blew it off again. Same process. It did this a couple more times.

After about 1 1/2 weeks in primary, racked to secondary. Forgot to take a gravity reading. Smells great, looks great.

Been in secondary for about 2 weeks now...and I am tempted to bottle. Just one problem...After I finished cooking an IPA the other night, I dropped my hydrometer and broke it. Homebrew shop owner is on vacation, won't be back for another week or so.

So, without a hydrometer, how do I know if it is ready to bottle? Also, would it be safe to bottle now and just let it ride out in bottle conditioning for awhile?

With high grav beers like dubbels you gotta think in terms of months, not weeks....

I have a 1.090 Belgian Strong Dark Ale that is over 3 months in the bottle and it is finally beginning to carb up, I don't think it will even begin to stop tasting green and like rocket fuel for about another 2-3 months....

I personally would leave the Dubbel at least a month in secondary, maybe 2 or three....Then bottle it and let it bottle condition for a couple more weeks...
