I dont have the abilities to lager so I was thinking of using a neutral ale yeast and ferment around 62.

Should I use notty, us-05, pacman, or bells yeast?

Any other yeasts that would make this turn out well?

:mug:

WLP029......I am not sure about corn, wheat, munich combo.......personally I would ditch the corn, ditch the six row and swap the base malt out for pilsen....

any other feedback? Think if i did 4.5lbs pilsner and maybe a pound or 2 of marris otter would work?

How about hops I have and their schedule?

What about WY1007, German ale yeast that you can ferment as low as 55F?
I saw people using it for pseudo lager beers.

Did you try this?

"us-05"

Safale 05? I have used that on my wheats. It makes decent beer. The yeast gives a citrus flavor.

Some of mine have gone past the citric yeast flavor even. I get a sour after the initial fermentation from having lacto around from grinding the wheat.
