Fermentation chamber help

I recently acquired a free master-bilt mini store fridge. The fridge is big enough that I don't need to modify it, but I do need to install an interrupter. I have no idea how to do anything with wiring, etc. So I need help on how/where to install the interrupter. Here is the wiring diagram it came with. I'm trying to keep it as cheap as possible please!

A larger picture of that wiring diagram - and a better term than "interrupter" (because it's unlikely you literally mean "interrupter") - would be helpful...

Oh wow. Why didn't I even think about an external temp controller? Thats way too logical haha
