I took a hydrometer reading today of an IPA I've had conditioning in a secondary for about 2 weeks now. I decided to taste it for the first time and wow was it good!
I was nervous about this brew, during the wort cooling of the brew session, the vinyl tubing of my immersion chiller exploded and some hose water had gotten into the wort.
As much as I worry about sanitation and being careful, I thought there was a good chance the brew might be ruined. I'd chill it and drink it now, it tastes so good--clean, crisp, hoppy, clear. I think this is the first beer in 6 years of brewing that's come out so nice.
