Hey all! I am in process of brewing my first batch of homebrew, hard cider!
After reading Extreme Brewing, and trolling forums nonstop, I think I'm ready...
Here's what I'm doing...
Steep:
4oz Honey Malt 20L in 1 gal apple juice at 150F for 15 mins.
Ferment:
Apple Tea
4 gallons unfiltered organic apple juice
White Labs WLP300 Hefeweizen Ale yeast
No added sugar
I'm hoping for a somewhat sweet, fairly low ABV%. Going to bottle carb it after it ferments out in primary. I decided to use the Crystal to give it a slight malt backbone, and to give the yeast a few additional sugars to work with. I selected the yeast instead of a champagne yeast to allow some residual sugar, and hopefully obtain a slight fruity clove flavor...
I made up this recipe, so we'll see how it goes, but I love to cook and I learn well from experimenting. So who knows. I'll report back!
