I washed some Wyeast Weihenstephaner in late December into several half pint jars, and when I ran out of those, the rest went into a gallon jug. These have all been on the fridge top shelf ever since. I was hoping to make a starter earlier this week in order to brew with these tomorrow, but the week did not go as planned. I have enough to be able to pitch several ounces, but don't know what viability to expect, to be able to make a better guess at the volume I should pitch. Has anyone tried pitching three month old washed yeast directly, without making a starter? Any guidance on this?
