What is a good method for measuring extract? I'm brewing a recipe that calls for 7lb 12.6 oz of extract and it comes in 3.3 lb and 6 lb cans. Thanks

Use 2x3.3 or 1x6lb of the liquid extract, and make the rest up with dry extract measured on a digital kitchen scale. Liquid extract is typically cheaper and tastes slightly better than dry extract (opinions vary - i think it all tastes meh at best) so it should be used to make up the majority of a recipe. But once its open it spoils quickly so whatever container you open you'll want to use all of. DME will stay fresh for a long time in an airtight container.
