I saved two small jars of yeast from my previous Belgian Tripel; I simply poured the yeast slurry into two sanitized jars, covered with sanitized aluminum foil, and popped them into the fridge. I was planning on using them a while ago, but now they have been in the fridge for nearly a month!

- Are these jars of yeast worth trying to use?
- If I do, will their age put any off flavors in my new Belgian Tripel?

If this jarred yeast thing ain't gonna work, as a backup plan, I bought a second vile of yeast.

I concurr with everyone else. Make a starter and if the yeast are good they'll wake up and everything should be fine. If they're not good, you'll know before before you start your brew. I expect you won't have any problems.
