I am looking at doing muncher's new castle clone today, and would like to do the 11g version, but only have a 10g mash tun. Could I just do a double infusion mash (I think that's what it's called). Basically, have two mash sessions...each around 7g? Preboil volume is est. at 13.7g, then boil down to 11g. Will that work?

That's essentially what I do. First 60 minute mash with ~6 gallons, then two sparges for 10 minutes each with the remaining water. This typically nets me a ~78% efficiency.
