I have been reading a bunch the last few hours and still I cannot figure out a good mash schedule for a honey wheat ale. I will be using the decoction method, and am mashing in a 10 gallon cooler.

5 lbs American 2-row
3 lbs Wheat
1.5lbs Various Crystal, honey, and aromatic malts

I am thinking
30 mins@ 122
60 mins@ 151
15 mins@ 163
2 mins@ 168 (mash-out)

Sparge at 170

This is a pretty intense mash process and honestly I don't understand it all. Do I need all these steps. I made the same recipe with specialty grains and DME last year and am going for a similar beer this year. I don't know what to do, however. I brew tomorrow morning and am hoping to get some feedback from some of you before that time.
