If i make a 1 gallon batch of mead, how much honey or maple syrup would i add at bottling to carbonate?

As much as everyone is up in arms about Northern Brewer being acquired by AB/InBev, the priming calculator they have on their site is a really good resource...it lists all kinds of alternative sugar sources for priming, although I will say, you have to realize that "brewed sugars" (for lack of a better term), like honey and maple syrup may vary in terms of sugar content, so you may not get the exact same Vol CO2 from two different honeys. Probably won't be enough to give you bottle bombs though, unless you were targeting a particularly high effervescence.
