If you are only building a few for your own system. I recommend the ones pre-made by Derrin at BrewersHardware.com. His workmanship is top notch and reasonably priced.
If you are bent on making your own, Omega sells all the parts. Thermistors are basically 2 wires soldered to a resistor and then covered with a sheath of some sort.

I have already bought all of my tri clover probes from Derrin a while ago for my brewtroller project. Since then i have changed my mind and would like to use the BCS 462 as my platform for my controller.
