This was my first attempt at an IPA and I really love this one a lot. Combo of Bell's Two Hearted (grain bill) and an IPA I had at the Cigar City tasting room (hop combo). Based on 70% brewhouse efficiency.
Grains:
11.25 (75%) 2 row
3 (20%) Pale Ale
.75 (5%) Caramel 40
Mash 60 minutes at 152F
Boil size 6.75 gallons
Hops:
1 Centennial 60
.5 Simcoe 10
.5 Citra 10
.5 Simcoe 5
.5 Citra 5
1 Simcoe Dry hop 4 days
1 Citra Dry hop 4 days
Yeast: WLP090 San Diego Super Yeast
OG: 1.070
FG: 1.014
ABV: 7.36%
I adjusted the hop schedule slightly based on alpha %s to come in at about low-50 IBUs (again, going for Bell's-like bitterness). Fermented in a swamp cooler at room temp (68-70F). My actual FG came in at 1.012.
This is fairly sweet, moderately bitter, with great aroma and flavor. A dangerously easy drinker at 7.6%!
