I'm looking to do a pumpkin ale soon to let it keg condition and be ready for fall.

I understand that pumpkin ales, by nature, are pretty labor intensive b/c all the crap that ends up in the brew-pot and the fermenter and often times requires a terciary fermernter to allow it to clear.

That being said, I'd like a tried and true EXTRACT recipe (steeping grains are fine) that uses CANNED pumpkin (because I'd like to start ASAP and fresh pumpkins aren't available yet.)

Would anyone like to put theirs forward?

I did this one last year, it came out great:

6.6 lb. amber LME
1 lb. 40 L crystal malt
1/2 lb. chocolate malt

1 oz. Hallertau 60 min.
1/2 oz. fuggles 30 min.
1/2 oz. cascade 10 min.

30 oz. canned pumpkin
1 cup brown sugar
6 whole cloves
6 tsp. pumpkin pie spice

Wyeast British Ale


Steep grains for 45 min. at 155 F. In separte pot, add the pumpkin brown sugar, cloves and pumpkin pie spice, to 2 quarts water, boil 15 minutes

Combine steep water and pumpkin water, add 3 gallons water for the boil, follow hop schedule above (plus irish moss at 15 minutes)

OG was 1.044, FG 1.014

This was probably my best extract brew, it was great after a couple months.
