Spent Grain - Welsh Potato Cakes

1 lb. Boiled potatoes
1 cup flour
1/2 cup barley grains
1 tsp. baking powder
2 T margarine
2 T sugar
pinch of salt
1 egg (optional) or instead of egg, grind in a blender 1 T. flax
seeds very fine, like a powder and while blending (on a low speed) I
add 1/4 cup water and blend until the mixture thickens.

Mix all ingredients except butter. Melt the margarine and mix
thoroughly with the rest. Form into 1 inch thick round cakes. Bake
on hot griddle until brown.
 
This may sound like heresey on this forum, but is there a substitute for the spent grain in this recipe? I'm not an AG brewer (yet) and have no spent grains; can I substitute pearled barley? If so, I'm guessing I'd have to cook it 1st? Sounds like a tasty recipe & I'd like to try it. Regards, GF.
 
You should look into at least doing steeping grains. It's cheap, no harder than plain extract and will make your beer better.

This is definitely something I will try this weekend. I like recipes that allow me to recycle the spent grains and this one looks simple enough to teach my daughter. Anything that promotes "daddy-daughter-day" gets kudos in my book!

We let our daughter get in on making Christmas cookies for the first time this year. She really liked "playing" with the ingredients and was pretty impressed to be able to say that she made the cookies happen. I think she'll really like this one, too.

I meant to ask, do you crush or process the spent grains any further or do you just throw 'em in as-is? If I can remember to take photos, I'll post the food-porn of the whole process! :mug:

Nice little recipe, do they rise a bit in the oven, get a little fluffy? Looks tasty, I love potato cakes.
