Is there any concerns with getting grains cracked at the local homebrew store and keeping them for a week or two before brewing? I keep them in a closed bucket in the freezer portion of my fermenting fridge. The freezer is turned off so it tracks at or a few degrees warmer than the fridge (65 deg).
 
You can keep crushed grain at room temperature for several weeks as long as the location is dry and out of direct sunlight.
 
I found a bag I had milled from over a year ago and it was fine. Just keep it cool and dry and you will be fine
