Looking for a complex bold malt character... whaddaya think? LHBS guy says looks good... but Ive been questioning his knowledge and integrity lately.

Im not sure how the 1lb of each the biscuit and aromatic will taste. Ive only used aromatic once before and its not yet out of the carboy

I gotta tell ya the 1 lb of honey malt seems to be WAY TOO MUCH. Do some reading on it and you'll read that even a few oz. will impart a sweet honey taste. I did a honey brown and used 4 oz. (1/4 lb) in conjunction with 8 oz. of caramel malt and it came out sweet with a honey character, not enough to be cloying, but enough where i might take out an oz or 2 of the honey malt. Be careful with biscuit as a lb may be a lot also, but with that I can't base experience although I've used it enough, just don't remember what amount is good by others' opinions. Here was my recipe and i loved it.
