I am curious on the different styles you guys have aged on wood chips. Also, it seems like Oak is the most popular, has anyone used any others i.e Cherry, Pecan, Walnut
 
I love Oak bourbon barrel IPAs. Oak bourbon barrels do well with stouts and porters too. I have also heard of using Oak rum barrels for stouts and porters. See a pattern? That said, experiment. Smell wood. Boil wood and taste the water. Taste a beer with it and imagine what you'll get.

My question is, how much oak per gallon?
 
I did a smoked hickory scotch ale. It reminded me of eating hickory smoked bacon. I liked it.
