I'm planning to brew a strong Scotch ale next weekend. Usually, I use an appropriate liquid yeast for my brews. However, given the high OG for this style, it would be much easier to use a couple packages of Safale than make a humongous starter. AHBS offers Safale S-33 as an option with their Scotch ale kit, so I was thinking of trying this yeast. Is it appropriate for a Scotch ale?
