    I've always added honey right before flameout (1 to 2 minutes). I've found this to be the best for me.

    Anyone use liquid yeast without making a starter?

    I've pitched one vial straight into a beer before I knew about making starters. The beer turned out pretty good, but the lag was scary. I thought my yeast was dead.

    Black Rye Ipa?

    Do you want any roasty notes in the beer? If not try midnight wheat. It will add a LOT of dark color without any flavor to speak of. I love the stuff.

    Winter brews!

    My problem is that I"m always off on my brews. I'm brewing the beer I want to drink in the summer in the summer and the beer I want to drink in the fall in the fall, etc. The effect is I'm always a season off.

    Is there a huge difference between pils and vienna? I wanted more malt and I figured the extra biscuit I got from vienna would give me that. I've used it as a base malt before without any issues. Plus you don't need a 90 minute boil with vienna.

    Are you planning on doing a extract, partial mash, or all grain brew? Because you said beginner, I'm guessing extract.     To cold crash or not

    I could crash about 48 hours before I keg. 24 hours is probably good enough though. Don't worry about the yeast though, you won't ever be able to remove all the yeast with just a cold crash. You would need some kind of filter to do that.
