    How long can you keep or store milled grains for?

    Thanks! I'm gonna at least move them to a ziplock bag, since they've just been in the bag from the store, and in the basement, so its been cooler at least. Obviously it would have been ideal to do it asap, but life happens lol, hopefully I'll be able to do the batch in the next day or so, thanks...

    So I brewed a Hefeweizen kit from NB 2 weeks ago and would most likely be able to start bottling tomorrow. But am wondering if I force carbonate, do you still have to let the beer sit/mature for about 2 weeks or is it still considered "green"? I have never kegged or forced carbonated before so...

    So this is probably gonna sound bad, I left a brew in a fermenter bucket for probably a good 2 years, and wondering how to tell if its bad, other than major obvious signs of mold etc... It was a Surly Bender alc content about 5%, pulled open the top and it actually smells fine, should I dump it...

    My last two batches taste like.. banana?

    I asked almost this exact same question a couple months ago on my hefe, the banana flavors have mellowed out a lot since then. I got the same answers, lower fermentation temp and use a yeast strand with less banana characteristics, haven't been able to brew another batch yet but its on my list...

    Thanks, for some reason I was worried that it would somehow self contaminate, maybe over thinking on my part, guess only time will tell! :) I usually 2nd as well because it frees up my equipment and I like to clarify as much as possible.

    So I brewed Northern Brewers Sweet Stout on January 20th and didn't get to bottling it til today, which is almost 3 months sitting in the primary. Is this a bad habit I need to break and any ideas if it will even be good to drink? Kinda nervous that I may have just wasted a whole batch of brew...

    Thanks for all the suggestions, I think I have a clearer idea of what I may do! :) I'm sure hubby and I both would like that black cherry, I have some glass 1 gallon jugs so I may even experiment a little! Thanks again!

    Hi I am not too familiar with cider, mostly do beer brewing. Strangely enough the hubby isn't a big beer drinker and requested some cider. I made a small 2.5 gallon recipe to give it a try, using store boughten apple cider, Lalvin Ec-1118 champagne yeast and sugar(I believe I used 5 cups)...
