    Harsh back end

So I attempted a Liberty Ale clone. It turned out pretty well except that the back end is a bit harsh. It's bitter, but not in a good hoppy way, it's distracting from the rest of the good taste. Here is my recipe: Malts: 1. Munton's Light LME 6.6lbs. 2. Brewers Best Golden Light DME 1...

    Thinking of getting into kegging

What size CO2 tank do you suggest for a 5 gallon keg? What does it cost to get said co2 tank filled? Am I best off buying a keg that comes with all the connections I need with it like this one...

    Christmas lists

So what brewing related gear is going to be on your Christmas list? I think mine will include a new turkey fryer setup and the supplies for a DIY mash tun.

Awoke to IPA krausen on the ceiling

So I know this is a big giant "Hey I'm fermenting!" sign. Here's the deal though. I don't like using blow-off hoses cause it just seems unsanitary to me. Should I be ok if I just clean out the airlock, resanitize, and replace it on the carboy?

Time to upgrade the brew kettle

I've got 3 batches under my belt and it's time to upgrade the brew kettle. Right now I can only do partial boils due to it being only about 4 gallons. I'm looking at something around the 30qt size and I'll probably go with aluminum cause it's a little easier on the wallet. I found this deal...

    Reuse of steeping grains?

What is the general consensus on hanging the steeping bag/grains to dry and then hanging them outside for the birds? There's no alcohol in them so I don't see how it could harm any animals. Thought it might be a creative use for used steeping grains. :)

    Pumpkin ale ingredients discussion

So I've got 1 batch under my belt and Thursday is brew day number 2! I'll be brewing an extract IPA kit that I'm adding additional hops to in a noobie attempt at cloning an Anchor Steam Liberty Ale. The second brew of the day is going to be my attempt at making an extract pumpkin ale. Since...

Young peach wine getting odd hydro reading

I have 5 gallons of peach wine in secondary. It was started on 1 July 2011 so it's only 2 1/2 months old. I racked it today and took a hydro reading. I almost lost the hydrometer cause it went so low. I won't really be able to tell when I have several days of the same gravity reading in...

    First batch success

Well today was D-Day for my first batch. First taste was surprisingly good. I did an American Amber kit for my first batch and even though I was sure that I did 15 things wrong on brew day and bottling day it turned out pretty darn well. Good carbonation, pretty good taste (a bit malty and...

    Probably a common problem

Alas, it is my first bottling day and I have wayyy too few empty bottles for my first batch of homebrew. What to do, what to do? I have about 4.5 gallons of wort that need to be bottled today and only 13 bottles. I do have plenty of wine bottles though. I'm thinking wine bottles may be a...

Maybe a bit OT, brew schools?

Anyone know of any schools that have brewing courses or certification programs? The only one I've been able to find is Niagara College that's right over the Canadian border north of Buffalo, NY...

    Really sweet fermenting must

So I started some dandelion wine in the beginning of May. It's been sealed up for approximately 3 months now. I racked it today and racked some into a shot glass to taste how it was getting on. It is super sweet (as sweet as a finished sweetened wine), though I could also taste that...

    Transporting wort

I have a 5 gallon batch of wort fermenting that I will need to transport with me from West Virginia to Michigan this week. Today marks 1 week since brew day so it's nowhere near ready to be bottled for easier carrying. Right now it's in a 6.5 gallon glass carboy. My plan is to rack it into...
