    first attempt, MY own recipe

Got it bottled yesterday. I did make an alteration to the original idea. Instead of puree of fruit, put the zest from 3 more oranges and 2 lemons in the secondary for a week. I did get a chance to try it and its gonna be pretty good. I guess wheat was the wrong word to describe the brew, it...

    winter wheat,,,,

I brew extract batches but obviously use steeping grains. In Illinois, several farmers are havesting their winter wheat crop and I have the opportunity to get a 5 gallon bucket for about $8. Has anyone used winter wheat in their beer for all grain or used as steeping grains? And what have your...

    New attempt..

Is 5-7 days dry hopping enough even if i cant get whole leaf hops? Would you guys strain the wort going into the primary? Or would you leave the hop sediment n let the wort sit on top of it during primary fermentation?

    New attempt..

Calder. Thanks for the input! I was thinking about cutting down on the steeping grains. I definately want the dry hoppyness. On the honey, I get it dirt cheap, and every beer with honey ive ever done has turned out amazing with a slight honey flavor but crisp finish. Good call on the yeast...

    first attempt, MY own recipe

I wondered about the corriander because i read some people using in for a long time in the boil and some in for just a few mins. And as soon as I added it, you could intstatly smell that above all else. Same with the paradise seeds. I think it may have been a mistake not adding them at flame...

    first attempt, MY own recipe

This is my first designed recipe without just altering a kit from Midwest or Austin Home Brew. I brewed 12 hours ago. After 7 hours after pitching yeast, the headspace in my 6.5 gallon carboy was filled and blowing out the top of the airlock. I hurried and cut a piece of tubing, and ran it into...

    Anyone ever...

I wanna do just a one gallon batch of cider and wondered if anyone has ever used Lalvin 71B-1122 Narbonne yeast and how it turned out? I was gonna use organic apple juice, 1 pint of honey, .5 to 1 lb of light brown sugar, back sweeten with xylitol, and bottle n carb with coopers carb tabs. I may...

Adding a vanilla note to a cream ale...?

adding a little xylitol or lactose to the vanilla vodka/vanilla bean mix may also help the flavor stand out

Adding a vanilla note to a cream ale...?

i would get 1/2 cup of smirnoff vanilla vodka, slice two good size vanilla beans down the middle, then across in 1 inch sections Let it set in the vanilla vodka for a week. Put the whole works in the secondary and rack ale on top and let sit for another couple weeks.

    Octane IPA

I did the Octane IPA kit as one of my first beers. It was awsome and one of my faves. If you have time to get extra hops, id recommend dry hopping too and NOT adding any extra wood chips. I also had a slight problem with it not clearing well, so if you have any whirlflock tabs or bioclear it may...
