I brew extract batches but obviously use steeping grains. In Illinois, several farmers are havesting their winter wheat crop and I have the opportunity to get a 5 gallon bucket for about $8. Has anyone used winter wheat in their beer for all grain or used as steeping grains? And what have your results been?
 
just for the record, afaik the only difference is going to be that it has higher protein content than spring wheat. But all that means is that it will be a few percentage points higher than spring wheat. the range is really only up to 15% protein. Soft wheats may be as little as 10%.

IMHO it shouldn't make much of a difference.

All else fails, you could do the "perfect 3.3 cent breakfast" thing.
