Original gravity is too low. What can I do?

Tried my hand at my first IPA and my OG is only 1.031. The yeast was added and fermentation has begun. Here is my question...Can I just boil some pale DME, cool it down and add it to my bucket? I am planning on a Pineapple IPA so I also thought that honey might work. The honey would taste...

    Help me classify this please

I unexpectedly stopped at a home brew supply shop that I had never been into before. Their prices were good so I decided to throw something together. I walked out with 1 pound of Cara Munich malt, 6.6 pounds of Munich liquid malt extract, 2 ounces of Hallertau hops and a package of Lallemand...

    Recipe Sheet

I was just wondering what, if any, method you folks use to keep your recipes and notes on your individual beers. I thought I would share the form that I use for my brewing notes. I try to keep super clear notes so that I can replicate the ones that turn out to be crowd pleasing.

A little help from you please

Although I have been brewing successfully for over 4 years I have only recently started kegging my beer. This is the second time that I carb at 30 psi then, after 2 or 3 days, I reduce the pressure to 10 - 12 psi to dispense but I still have a problem with too much head in the glass. With the...

    Orange juice vs. Orange peel

So, I have it in my mind to do a spin on a Blue Moon type beer except I really want to use blood oranges not only for the really cool color but also the natural sweetness they have. I know that most often you would use orange peel but that isn't the same thing in this case. Is it possible to...

    Too much citrus...here's the question

I had never used citrus in my brewing before and I added WAY too much dried lime peel. My sample tastes too sour. Is it possible to boil off some additional wort and add it to some of what is in my secondary in an attempt to dilute the excessive lime taste? If I'm careful with the...

I might have bitten off more than I can chew

So...I had this idea for a Pre-Columbian based brew using corn. Little did I know that I needed to use Amylase enzyme and a test tube etc. to get the job done. I have only ever made extract and partial grain brews up to this point and I don't know if this grand idea will work or not. Has...

    What's your story?

There has to have been a reason for all of us to start down this path to home brewing. Here is mine...A few years ago my wife and I were at a pub in Boston and I commented on a draft beer on the menu that cost $11.00. Because it was my birthday, my wife insisted that we try one. "It must be...

    home brew competitions

Does anyone out there know of any home brew competitions in or around New England that I could send entries too? Having just placed 2 third place entries and a first place entry in my first ever local competition I am anxious to enter more.

    I can't believe I won

It may have been a local home brew competition but it was the first time for me. I entered 3 of my brews and places third for my Autumn Ale, third for my Scottish Strong Ale and first for my English Mild Ale! Totally blown away right now!

    My Approach to Labels

Simple design. I just wanted to show that you can create effective labels with nothing more than Google Images and MS Paint. What do you think?

    adding color for Halloween brew

I know this is a strange question but I am thinking of adding an artificial color for a Halloween Party brew. Can I use regular liquid food color or does anyone have a better idea?

Looking for a Helles Bock recipe (not lagered)

I understand that a true Helles Bock is lagered. However, being a beginner I was wondering if anyone has a recipe for a Hesses Bock style brew that will be ready far sooner than a true lager. I'm looking for a brew that has the maltiness and low hops profile but is a lighter more golden color...

Weissbier Bavarian Hefeweizen (Schneider Aventinus Clone?)

    Carbonation question

I thought I was ready to bottle my Belgian Hefeweizen today but I have a question (concern?). The brew had a starting gravity of 1.052. It was in my primary for a week when activity in the airlock had greatly slowed. I siphoned into my carboy and activity increased for a few days. The...

    Reducing Hops Flavor

I enjoyed my first ever brew (as did everyone else that tasted it) and would like to brew the recipe again. I would like it even better with slightly less hops flavor. To acheive that, should I reduce the amount of hops the recipe calls for and boil for the same amount of time or use the...

Is it ok to use ice?

After boiling my wort, it it ok to add ice cubes to it to not only help cool it down but to help add to the water volume needed to get up to 5 gallons? I haven't done it but it certainly has crossed my mind.

    sampling

My very first home brew has been bottled for a week now. God help me...the desire to crack one open for Father's Day is incredible! What can I expect after only a week? Should I sample or wait longer? I'd hate to have my very first taste to be a let down. How much will I miss out on by NOT...
