    Great advice - thank you for that idea! I have adjusted to the following: 2.7g Gypsum (CaSO4) 3.5g Table Salt (NaCl) 5g Calcium Chloride (CaCl2) This yields the following (in 8 gallons): 65.8 Ca 45.5 NA 150 Cl 50 SO4 Does that look better for the overall profile?

    I am looking for a 50:150 SO4/Cl ratio as you have all discussed in this thread. Using Brewersfriend, I believe the best way to get there from RO water would be to add 2.7g of Gypsum (CaSO4), and 9.5g of Calcium Chloride. This will also bring the overall Calcium up to 106 mg/L - is this...

    I would shoot for 150F and mash this for 90 minutes (the lower temp you mash, the longer you should wait for conversion). 1 more thing. Have you thought about First Wort Hopping? Since you seem to be leaning towards a hopburst at the end of the boil, it might add some nice hop flavor...

    Help with Weihenstephaner Dunkel Clone (Partial Mash)?

    From my experience brewing Hef's and Dunkels, a decoction mash is definitely the way to go. Not sure how that would convert for brewing as a partial mash, but definitely something to think about.

    Pitched US-05 on Saturday evening around 5pm. OG was 1.070. Temp was 70* F 1 packet dry yeast. Still no action in the airlock. Any ideas? Lid on bucket is sealed, bunghole is sealed and intact around airlock stem. Thanks for any and all comments!
