    Caramel cream ale?

    Yea its a little higher then it was originally made, but I didnt add corn sugar to it to raise it. Instaed of just using an extract recipe I used a partial mash and mashed more grain. I am looking forward to the finished results.

    Brewed it again tonight. This time I did use the 1007 German Yeast. While I was brewing I finished the last of my first batch. I PM a bit more grain this time and raised the SG to 1.066. Other then that followed V1.

    Wine Cooler?

    You can make any of the Island mist kits into a wine cooler. They are really good and come in all sorts of flavors.

    Special B malt

    Used it in a Brown Ale, and it made a difference for sure. I also eceeded more then 1/4lb and used half, and the flavor of this brown is awesome. I like the grain and would definatley use it again.

    I dont have any on hand right now, so I probably wont use it either. I was wondering if I had to make an order for it tomorrow or not. I will be able to get an idea of taste at bottling, and if I think I should I will add it there.

    Brewing this beer tomorrow. I have a 1086 starter going right now for it. I am going to partial mash all grains, and use the DME and LME as described in the recipe. Did anyone that has done anything close to this use lactose? I was thinking of adding lactose to it at bottling time.

    Make sure you put a blow off tube in place of the air lock on the fermenter. I learned the hard way on this one.

    Cool, thanks Orfy, and Rich. Is the 3068 known for such active fementations? It was a real active starter so I should of known this was coming, from now on I think I will use blow off tubes in 1/4 gal of water to be safe.

    Damn It! I missed my target OG by .004! I actually think that my scale that weighs my DME, and grains is a POS! I am going to get a better digital one this week.

    Do have 1 question on this. Should I just keep this in the primary until finished fermenting and bottle it? Or should I keep it there a minimum of 2 weeks? I know I dont want to rack this into a secondary, but should it just sit until its done fermenting or longer?

    Fg Seems a little high???

    Mash temps were 148* I sparged at 170. I wrote sparged instead of mashed in my earlier post. All calculators gave me a FG of 1.014 that was minus the lactose. So I might not be that far off. I forgot when looking at the projected FG that I had to add the #s for the lactose. Not quite sure what...

    Simple Q: When to stir, when not to

    How about doing 5 lb mini mashes, in a 2 gal cooler? Should I stir anymore then the initial mash in? I have done 2 and my best effciency has been 68% not stiring at all except initially. Would stirring make it better?
