    Thanks guys, I think it must be the mixing too. I do cut the honey/maple with 1/4 cup of warm water and then put that in the pot before siphoning beer in.     I searched but can't seem to find the info on how much liquid yeast (white labs SF Lager) to use for a 1 gallon batch.     Yeah, I love the Wells Banana Bread beer, so deelish. We'll see if this turns out. I don't know anything about how the fruit behaves during fermentation but we're about to find out. Someone suggested sanitizing the banana with vodka. I'll do that just for the hell of it, it won't hurt anything.
