    Estimated OG

I forgot to take a gravity reading last night. I used 4 US Gallons of Whole Foods Organic apple juice plus one 12oz can of Kroger concentrated apple juice. I'm estimating around 1.080...does this sound close? I'm not sure how thick that concentrate is, but I read 70 Brix somewhere online...

I want to make my first kit wine, but...

Hello everyone, I'm an experienced brewer and mead maker, wanting to purchase my first wine kit this weekend and I have a couple of concerns. I do not use carboys/better bottles and have no desire to start. Do any of you use plastic buckets for your secondary and notice any ill effects...

    temporary lagering?

I have a beer that is ready to start lagering. Will it adversely affect this beer if I start lagering it now and then raise the temperature in my chest freezer back up to 50F for a few more weeks while another lager ferments later on? I only have one fermentation chamber and I'll be brewing...

Will you look over my IPA, please?

I'm not much of an IPA guy, but I'm brewing one this weekend because it will make a nice change. If you ARE an IPA brewer, would you please look over my recipe and make suggestions, especially on the hop schedule? I prefer hop flavor over bitterness personally. ~~~~~~~~~~~~~~~~~~~~~~~~~~~...

    Southern hops, low yield

I'm in South Carolina and have two hills of Cascade, two years old. The bines climbed well and fast to the top of my trellis and I collected hops as they matured rather than in one harvest. I stored my hops in one bag, so I know that I ended up with just 1.3 ounces dried. :( ...not even...

    It's a big fat conspiracy!!

..and I don't like it NONE! I'm sure those yeast people could double or even triple the amount of yeast they put in those little packs, but they don't because they are in cahoots with the malt extract people ... I just know it!

    Math question

I have 2 liters of 1.055 SG wort that I was saving to cut with water to make a starter, but now I want to use the wort in a mead just to get rid of it more than anything else... How can I figure what the sugar addition is going to be (in a 5 gallon must) from adding this wort? I know it...

    ESB full of Diacetyl

After a week in primary, I took a gravity reading/sample of my ESB and it tasted like butterscotch. Fermentation temp has been a steady 66F. Since I am using Safale S-04 yeast, the beer is already looking quite clear which makes me worry that the yeast will drop out too soon and Diacetyl...

How long can I store wort without freezing it?

I will be making my starter this evening, which I will need to step up a couple times for next weekend's lager brew. Do you think I'll be ok to store my extra wort (for the step-ups) in the refrigerator for later on in the week, or is it best just to freeze it? I figure on storing the wort...

    Throw-together American Amber

Hello, I'd like to ask for suggestions, please, on my first lager. I had NO idea I would be lagering this year so all my ingredients have been purchased with the intention of making specific ale recipes. Now that I have temp control, I am DYING to try a lager and have come up with the...

Building a round cooler mash tun, have a question.

Up until now, I have been reasonable happy with BIAB, but providence has shined on me and I found a 10 gallon Gott cooler at the thrift store for $6 USD. :ban: Now I am wanting to build a mash tun which appears to be easy enough, but I have a slight problem. The cooler I have is kind of...

Good propane price at a chain store

Hey all, If you have a Tractor Supply Company near you, you may want to look into their propane prices. I just found out today that one in my home town fills for $1.99/gal which should come to around $9.00 for a fill on a 20lb tank! I've been paying $15 per tank which was the best price...

Amusing beer recipe from my deceased father-in-law

Since everyone spoke so highly of my father-in-law's homebrew, I have been trying to get a copy of the recipe since he passed on about a year ago at his home in South Africa. Yesterday, I finally got the recipe from a cousin-in-law and had a good laugh at what this homebrew consisted of ... I...

Installing a ball valve in a kettle

Surely there must be a good tutorial for installing a ball valve and/or thermometer in a brew pot from scratch, but I cannot seem to find what I need. Would someone point me in the right direction, please? I'll be doing this sometime during the year and need to make sure my planning is...

    High Alpha English hops

I am busy purchasing my bulk ingredients for 2013 and intend to brew a LOT of ESB style beers. I am going to buy a pound if EKGs to use as my flavor/aroma hop, but also need another variety with a higher Alpha Acid for my 60 minute hop. I REALLY want to limit my recipe to two ounces of hops...

    kegging an infected beer

I opened my brown ale after 2 weeks fermenting and wanted to cry when I saw that familiar white scum on top that tells me I have gotten an infection AGAIN  I tasted the beer and unlike the last two times this happened, the beer does not have that disgusting taste I have learned to...
