    Frozen Fruit Concentrate

Assuming the concentrate is preservative free, what can I expect from using this in a berliner weisse secondary fermentation? Will I get some big flavors from this? Will it ferment out cleanly?

Berliner Weisse - Full sour wort

I'm craving a nice berliner weisse and have decided to brew one. I'm going to be doing a 3 gallon batch and wanted to create this thread to talk about my problems/successes as I brew this. I welcome any and all discussion. The plan: 2# 2 Row 2# Wheat Malt Mash for 60 minutes around 150F...

    Berliner Weisse Attempt

I'm looking for some feedback or critique of a berliner weisse recipe I've designed. I've done a bit of research and it seems like everyone has a different opinion on how to sour. For a 3 gallon batch, I'm going to first mash as normal with: 2 lb pilsner malt 1.75 lb wheat malt After...

    Flying with grain and hops

So I'm visiting family on the west coast and bought some grain (13 lbs) and hops for a new recipe at a local homebrew store since I don't have one in the east coast. Has anybody ever flown with grain and hops in their carry-on luggage? Would TSA have a problem with this? I'm not checking a...

    AIPA Recipe Critique

In my first attempt at a recipe I want a medium bodied, lightly bittered, 6.5-7% abv, hop forward IPA. I'm looking for a bright, floral aroma and taste. Here's what I've come up with: 12lb 12oz pale malt 12 oz vienna 12 oz crystal 60 2 oz chinook 60 min 1 oz centennial 15 min 1 oz...

    Low FG question.

I brewed my first all grain, a pale ale that was supposed to have an OG of 1.052, but ended up at 1.034. I checked the FG today, 14 days after brewing and it was 1.008. Does this sound like its possible? That seems so low to me.

    First All Grain Brew Problems

So I did my first all-grain brew yesterday and it didn't go quite as planned. Target OG 1.052 Pre boil OG 1.034 Post boil OG 1.042. I missed the OG quite badly and I think it could be one of two reasons. I am using a 7 gallon round cooler, so when my grain and mash water are combined...

    Forgot priming sugar

So I boiled my water, dissolve the corn sugar into it, put it in the fridge to cool and completely forgot to add it to my beer. I have 48 capped bottles with no priming sugar. I assume I have to uncap them all, add sugar and recap, but should I just add sugar or make another sugar/water...

    Moving to AG

I've done some extract batches, then used some steeping grains and now I'm ready to go all grain. I'm a little confused on what I'm going to need so hopefully someone can help clear things up. I have a 10 gallon pot and propane burner. I also have a keg and the capability to convert it into...

    Dry Hopping

I brewed an extract Two Hearted Clone 2 weeks ago. I have to bottle it in 2 weeks because I'm moving and will be unable to keep it refrigerated. I have an ounce of hops to add to dry hop it. Should I dry hop it now and let them stay for two weeks or do it sooner to the bottling time?

    Am I doing this right?

I've had about 6 extract batches with this weird off flavor that I've deduced is from fermentation. The taste/smell is not there after the boil, but is there after 2 weeks. (And no, it doesn't go away with time, it's still there 6 months after bottling) I'm hoping to brew the Two Hearted Ale...

    I need help, badly

I've made 4 beers so far (amber, hefe, pale, stout) and each one has had the same weird flavor (it's not because they're 'green', they've been bottled for 3+ months). I've tried tweaking my methods but nothing seems to work. I can't properly place the taste so I was wondering if someone...

    What a brew day!

I was brewing Norther Brewer's Moose Drool clone (Caribou Slobber) and had quite the day. It went pretty smoothly outside with my propane burner and new big 10 gal pot, but I ended up running back and forth when it came time to cool it and get it into the fermenter. The main "problem": I...

    Partial mashing

I'm brewing an Amber ale this weekend with some new supplies and have a few questions: 1) I have about 12 oz of grains to mash. I see that I'm supposed to use 1.25 quarts/lb grain, but this must be for AG brewing and I'm using extract (recipe calls for 6 lbs of extract), so how much water...

Same funky taste in every batch

I just tasted a cream stout I brewed about a month ago with a kit from Midwest. It's been in a temperature controlled fridge at about 60F. It has this same distinct taste as 3 other batches I've brewed that almost makes it undrinkable. I find it hard to describe but it's almost cidery and...

    Stour fermentation temperature

I just brewed a Cream Stout from Midwest and wanted to know what temperature you would suggest I set my fridge to ferment at? I pitched a Sarfale S-04 yeast. And had an OG of 1.040

    Dark grains = stout?

So I bought the Cream Stout and Amber Ale kits from Midwest. They came in their separate boxes but I accidently mixed up the grain bags, :( which aren't labeled. All the grains are mixed together and by looking at them one is definitely darker. Can I safely assume that this is the grain bag...

    Laptop controlled fermentation chamber

A little background: I've done 3 Mr. Beer kits at room temperature and 2 better bottles with water/ice buckets temperature control. I've been very disappointed with the off flavors that I'v narrowed down to being a result of poor fermentation temperatures. My dad, being a computer...
