    safbrew T-58?

    I am about to write up a thread about three different yeasts I used in making a Belgium Dubbel. T-58 is one of them. Summary: it started fast, within 4hours (airlock activity) and smells great! Look for my post for full write up on WLP500, WLP515, and Safebrew T-58.

    Wlp500 Trappist ale

    So I want to reaffirm the knowledge on this great site. WLP500 yeast is not a 24 hour starter. Like others mine took ~30 hours to get going. What made me uneasy is I split my wort w/ Platinum series Antwerp ale yeast and it took off in ~8hrs. So I'll follow up with taste reviews on this Dubbel...

    Worried about krausen after a month

    I am using WL008 (East Coast) as well and the Krausen has not completely dropped out as well. Initially it took off (under 12hrs w/ yeast starter) and then settled after 48hrs. I am in the 2+ week in primary and plan on letting it sit for another 2 weeks before kegging/bottling.
