    Dissolving Honey

Today I backsweetened a cocoa mead I started in April. I used the local wildflower unprocessed honey that I mostly use for everything. It is normally quite crystallized when I get it. I've never had an issue dissolving it in warm water when starting a mead. Today I added 1/2 lb to 1 gallon...

    Vanilla Cyser

I just tappped into my Vanilla Cyser from last fall and it may be my best yet. I fermented 5 gallons fresh pressed juice with 5 lbs local raw honey. I started in late Oct and left in primary until early March. I racked into a carboy with 2 Tbsp real Vanilla extract and it sat until June. I...

    A Cider Obssession

I had to run into Walmart to grab a few items this morning. As I'm entering the store and pushing my cart past row where they have all of their "HOT" deals I see 100% apple juice, no sugar added, only preservative abscorbic acid, 64 oz jugs 2 for $3. WOW 3 bucks a gallon for apple juice. All of...

    Skeeter Bread

I started a batch of Skeeter Pee yesterday with a twist. I had a 1 lb bag of 40L caramel malt lying around. I wanted to add some malt to the pee so I ground it up in my coffee grinder and did a mini-mash on the stove top. I'd heard of spent grain bread and had been wanting to try it. I made...

    Fall Cider prices

Has anybody heard any reports on the status of the apple crop in their area? I've heard that Michigan lost 90% of the apple and tart cherry crop due to late frost. I'm afraid this will make fresh pressed juice horribly expensive in my area.

    Backsweetening vs Cold crashing

I have a question for the experienced cider makers that keg. Do you prefer to ferment dry and backsweeten or to attempt to stop fermentation at desired FG by cold crashing and or stabilizing? I'd appreciate your input as to why you prefer your favorite method. :mug:

    Freeze concentration experiment

I froze 1/2 gallon of my mulled/spiced cider. Prefrozen it was a bit on the spicy side. Postfrozen it is really spicy. I am going to let it age for awhile see what happens. The quart jar was obviously the first qt thawed and the 1/2 gal jar was the second.

    Sweet sparkling cider?

I am relatively new to brewing. I have a theory I would like input on. I want to develop a system to make sweet sparkling cider, bottled into beer bottles without pasteurization. For this to work a person would want to create a very repeatable recipe with consistant fermenting conditions...
