    Sour Imperial Stout ECY02

I've decided to do a sour stout. Each year I brew an imperial stout to share with family the Christmas holiday season the year after I brew. So this batch I'm bottling next month was brewed in October of 2012. These have been fermented with brett lately. I've been toying with the idea of a...

    Jelinek Cork Group

http://www.corkstore.com/ I placed an order to find out the item I ordered was out of stock. They promptly emailed me about the stock issue and offered a replacement. The replacement champagne corks are a bit bigger, but should still work. So instead of 28mm diameter corks that most homebrew...

    Lactobacillus plantarum

Okay anyone planning on brewing a sour soon? If I were I'd jump on this real fast just to test out. Hell if I can find this stuff in a store I will give it a shot in a small starter to see if I can get it to sour rather quickly. When looking at one of my brewing microbiology reference books...

    Champagne Floor corker issues?

I am just wondering if anyone else has had issues with the Italian floor or champagne corker cutting corks? I just fixed mine and it was a giant pain in the butt I will say for sure. It took some figuring out and a new set of jaws but I got it to stop creasing and cutting corks between a fixed...

    Homebrew mash filter system

So one of brewing systems available for commerical breweries is a mash filter system. The mash filter replaces the lauter tun which decreases brew time batch to batch. Other advantages are you recover more wort, use less grain, and use less water. Essentially it's like a grown up version of...

PSA: Do not use anthocyanin rich fermentables in sour beers

Last year I thought I was so smart and creative to replace yellow corn in my two flanders beers with purple peruvian corn. The taste at the beginning was great, and they had a very cool color. I tasted the oude bruin through the fermentation from time to time and it weirdly seemed to be...

3 gal Ball lock dip tubes?

I have borrowed some 3 gallon ball locks and thought one only needed a poppet and a pressure valve but have come to realize that both are missing the liquid diptubes. So the question is, are there 3 gal ball lock diptubes or do I need to buy 5 gal dip tubes and just cut them?
