    I'll move it away from the larger heater for now, and work on purchasing a lasko. Moving it further away should help with how fast it heats up. I'm looking to go as high as 85 degrees with this beer. It's a saison using ECY08, which is very heat tolerant.

    1 Micron filter and hop character

    I would like to filter my ESB prior to kegging, but I'm afraid the 1 micron filter will strip some of the bitterness and hop character (flavor and aroma). Is this something I should be worried about?

    I believe this will probably be the method I use. I was originally standoffish on purchasing a PID, since I wanted to keep the control buildout cheap, but I do believe it is the best method. Thank you guys very much for all of your help and advice. It is greatly appreciated.

    This is the part that bums me. I don't want to install a temp probe into my pot. I would rather just control the power output to my element. I have an analog thermometer in my pot already, and would prefer to just dial down (or stop) the heat once I've reached the temps I need.
